Longevity, freshness and consistency: these are the three “non-negotiables” when Valerio Civa tastes one of his sparkling wines months after bottling. “We do not allow ourselves any deviation from our signature profile: no loss of pressure, no extraneous notes, no noticeable differences between bottles”.

Hence the immediate interest in NOMACORC Pops, which was recently launched in the sparkling wine segment: “We were looking for greater consistency between bottles and better control of freshness over time. Moreover, the zero-emissions approach was in line with our values: a practical choice, not an ideological one”.

In terms of performance, the company reports stability in both pressure retention and dissolved CO₂ levels, assessed primarily under real-world conditions throughout the product’s shelf life.

However, it is with regard to oxygen that the difference becomes visible in the glass: “Less oxidation and a significant reduction in aromatic deviations. The profile remains sharper, the fruitiness is preserved, and the development is more consistent and clean”.

The key word remains consistency. In addition to Quality Control checks, CIVA relies on internal sensory panels and feedback from professionals.
