Dairy products: a white paper on managing the risk of STEC E. coli

The most effective approach to reducing the presence of STEC E. coli in the milk supply chain remains the implementation of multiple measures in sequence

STEC E. coli pose a serious risk to public health, especially in raw milk dairy production.

The FBO must carefully check the possible routes of introduction into the supply chain. The most effective approach remains the application of multiple interventions in sequence, an “obstacle system” to reduce the presence of STEC.

Future analytical methods that are more reliable, multi-target and low-cost will enable surveillance and monitoring throughout the supply chain, with a view to establishing more precise safety limits.
