Caviro, an Italian wine cooperative with over 35,000 hectares of vineyards, has launched Tavernellow 3% vol, a partially dealcoholised sparkling wine produced and bottled at its dealcoholisation plant in Savignano sul Panaro, in the province of Modena.
An extension of the iconic brand’s range, this new product is the result of traditional winemaking, followed by a controlled process of partial dealcoholisation, which reduces the alcohol content whilst maintaining the wine’s organoleptic profile and sensory balance.
Tavernellow 3% vol will be previewed at Vinitaly 2026 and will subsequently be available on the shelves of major retail outlets in two versions: white and rosé. The former, made from aromatic grapes, is fresh, harmonious and ideal for aperitifs, whilst the latter, produced from red grapes, is crisp on the palate and perfect for an impromptu lunch with friends.

Caviro’s dealcoholisation plant was completed in around 12 months with a total investment of over € 1.8 million; it covers an area of 200 square metres and has a production capacity of up to 30,000 litres per day, with an annual potential of over 9 million bottles. Designed in accordance with Regulation (EU) No 1308/2013, it enables the production of NoLo (No and Low Alcohol) wines with alcohol content ranging from below 9% ABV down to near zero ABV (alcohol-free).
