Label verification systems based on artificial intelligence (AI) and optical charac ter recognition (OCR) are emerging technologies that can revolutionize food safety and traceability.

The aim of a recent study conducted by a US researcher (Polo et al., 2025) was to analyze how these digital solutions contribute to improving operational efficiency, reducing human error, and ensuring regulatiory compliance in food production and distribution systems. In addition, the author explores the integration of advanced computer vision tools, such as Garland Verify Edge, which enable realtime inspection, RFID (Radio Frequency Identification) tracking, and blockchain integration to document and validate product information throughout the entire supply chain.
