Engineered to ensure uniformity and continuity, it provides precise processing without altering the dough’s structure. Two cylinders perform the sheeting process, ensuring a uniform dough thickness — essential for regular moulding and a proper crumb structure during baking.

Loaves are rolled using a stainless-steel net, which allows for progressive and gentle shaping while maintaining consistent product form. The system is completed by a 600 mm wide moulding table, that is height-adjustable for maximum operational versatility and ease of use.
