It has also made available the <a href=\"https:\/\/www.salute.gov.it\/new\/it\/faq\/faq-latte-crudo\/\">FAQs<\/a>&nbsp;addressed to citizens and operators in the sector, to answer the most frequent questions about the consumption of <strong>raw milk <\/strong>and, more generally, about the risks for the most vulnerable groups and the correct prevention measures.<\/p>\n\n\n\n<p>The Guidelines provide operational guidance for:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>food business<\/strong> operators, as part of their self-monitoring activities;<\/li>\n\n\n\n<li><strong>local health<\/strong> authorities, for surveillance and official control activities;<\/li>\n\n\n\n<li>all those <strong>involved in the production and marketing of raw milk and dairy products<\/strong>, in order to strengthen risk management.<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>STEC <\/strong>infections can manifest with clinical pictures of varying severity, from mild or asymptomatic forms to haemorrhagic diarrhoea and, in the most severe cases, haemolytic uraemic syndrome (HUS), the main cause of acute renal failure in children. <\/p>\n","protected":false},"excerpt":{"rendered":"<p>The
