The problem is not theoretical: it can be the reality for those managing beverage, wine, mineral water, juice and ready-to-drink cocktail production facilities. Traditional microbiological analyses, accurate, certified, indispensable, take 48-72 hours to return results. In that time, many batches have already been produced, packaged, shipped, and sometimes sold. It is this gap between production speed and diagnostic response times that <strong><a href=\"https:\/\/www.alitest.it\/\">Alitest<\/a> <\/strong>addresses. Based in Viadana (MN), the company has been active in the food safety sector since 1998, with a long-standing presence in the dairy industry and an increasingly prominent role in food &amp; beverage and bottling. As the official Italian distributor of<a href=\"https:\/\/www.charm.com\/\"> <strong>Charm Sciences<\/strong><\/a><strong> <\/strong>tests (the <strong>novaLUM II-X bioluminescence meter<\/strong> and its range of swabs), Alitest has recently added a second instrument to its portfolio to complement the novaLUM II-X bioluminescence meter: the<strong> BioDtex portable UV lamp<\/strong>, for the immediate visual detection of biofilms, organic residues and contaminants on surfaces and equipment.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><strong>Two instruments, one screening approach<\/strong><\/strong><\/h2>\n\n\n\n<p>Readers of this magazine will already be familiar with the <strong>novaLUM II-X bioluminescence meter<\/strong>: it measures the <strong>presence of ATP<\/strong> (adenosine triphosphate) on surfaces and in liquids via a bioluminescence reaction, providing a numerical value (RLU, Relative Light Units) within seconds that indicates the level of organic residue. It does not distinguish between bacteria, limescale or unrinsed detergent, but provides quantifiable confirmation of whether a surface is actually clean following sanitisation cycles. The data is recorded with the time, date and location, creating reports that can be consulted and are useful in the event of an audit.<\/p>\n\n\n\n<p>The <strong>BioDtex lamp<\/strong>, the product that Alitest is now bringing to the Italian market as the sole representative, operates on a different yet complementary principle: it is <strong>a lightweight and ergonomic visual inspection tool that emits UV rays through 16 LEDs<\/strong>, causing organic substances, chemical residues, limescale and &#8211; significantly &#8211; biofilm, which is normally invisible to the naked eye, to fluoresce. The result is immediate and straightforward: the operator wears the protective goggles provided, points the lamp at the surface and &#8211; if present &#8211; sees the contamination. There is no figure to interpret, no software to consult: there is a colouration that appears where there is something to clean.<\/p>\n\n\n\n<p>\u00abThe lamp is a pure screening tool &#8211; explains Domenico Ferreri, Sole Director of Alitest -. It does not certify anything in an absolute sense, but it makes visible what you would never see with the naked eye. An operator can shine the light on ducts, ventilation grilles, fittings, work surfaces, walls, everything. And if they find anything abnormal, they can then investigate further using the bioluminescence meter or microbiological swabs. Biofilm appears green under UV light. Its presence is not necessarily indicative of catastrophic contamination, but it precisely indicates where action is needed before the problem worsens.<\/p>\n\n\n\n<p>\u00abBiofilm is often found in places nobody thinks to look. Detecting it with a bioluminescence meter, or even better with BioDtex technology, takes very little time and involves extremely simple procedures\u00bb. BioDtex technology was not originally developed for the food &amp; beverage sector: its origins lie in the mega-silos of the powdered food industry, where large lamps are used to detect micro-cracks in steel walls &#8211; the invisible fissures where bacteria are most likely to lurk. Miniaturisation into a portable format has made the same principle applicable in any production facility, at an affordable cost.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><strong>Operational features of the BioDtex lamp<\/strong><\/strong><\/h2>\n\n\n\n<p>From an operational perspective, the BioDtex is <strong>designed for daily industrial use<\/strong>. It weighs around 500 grams, is shock-resistant, has a battery life of 4.5 hours (supplied with two interchangeable batteries) and is equipped with a display featuring an integrated camera that allows photographs to be taken of the inspected areas. The images are downloaded via USB\/Bluetooth and archived, allowing the company to build up a photographic record of identified issues over time and to monitor the development of specific areas.<\/p>\n\n\n\n<p>A key distinguishing feature compared to ATP measurement systems is the <strong>complete absence of consumables<\/strong>: the lamp requires no swabs, reagents or frequent calibrations. The only maintenance required is an annual check of the LED intensity, carried out using a dedicated instrument that certifies the correct functioning of the light output. \u00abIt\u2019s a tool you buy once and it works. There are no recurring costs, no mandatory accessories. This makes it sustainable even for small and medium-sized businesses\u00bb. Unlike many UV systems, the BioDtex can also be used in ambient light conditions, provided it is held close to the surface being analysed. This eliminates the need to darken rooms during inspections, making it easier to integrate into the normal workflow.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Combined use: from the lamp to the bioluminescence meter<\/h2>\n\n\n\n<p>The operating protocol that Alitest recommends to its clients involves the integrated use of the two instruments, with the lamp serving as the first level of inspection and the bioluminescence meter as the tool for quantification and documentation. In practice: the operator passes the lamp over the surfaces during or after cleaning operations; if anomalies are detected, they take a swab with the novaLUM II-X to obtain a numerical reading. If the value is high, sanitisation is carried out again. Companies working with high-alcohol-content products have a natural protection that reduces the risk of microbi. Those who bottle fruit juices, flavoured waters, low-alcohol ready-to-drink cocktails or de-alcoholised products, however, face much more critical conditions, as there is no alcohol or carbon dioxide to act as a natural preservative. For these businesses, daily or near-daily monitoring is the norm, not the exception\u00bb.<\/p>\n\n\n\n<p>One issue Ferreri emphasises is the need to monitor not only the bottling lines but also the surrounding environment: ventilation, ducts, grilles and air conditioning filters. \u00abIn one documented case, the source of Listeria contamination in a food production facility was a deteriorated electrical cable, not a processing surface. No one would ever have thought to check it. With the lamp, it would have been spotted in seconds. The problem isn\u2019t always where you expect it to be\u00bb.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><strong>The wine market and the challenge of non-alcoholic drinks<\/strong><\/strong><\/h2>\n\n\n\n<p>The push towards low-alcohol or alcohol-free products is reshaping the priorities of many bottlers, particularly in the wine sector. When the alcohol content falls below a certain level or the wine becomes alcohol-free, the microbiological risk increases significantly. Wineries exploring this market segment often find themselves having to deal with production processes they are not used to. A tool such as the lamp, used alongside the bioluminescence meter, becomes in these cases not an accessory but a structural necessity\u00bb. The company already has clients operating in the premixed cocktail drinks sector, with production aimed primarily at the private label channel.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><strong>Regulatory requirements and monitoring culture<\/strong><\/strong><\/h2>\n\n\n\n<p>One aspect that emerges clearly from the discussion with Alitest is the Italian regulatory framework: <strong>the use of these tools is voluntary<\/strong>. There are no legal obligations requiring ATP monitoring or UV inspection of production facilities. Mandatory sampling applies to the final product, not the processes. Good manufacturing practices outline the correct approach, but do not enforce it with penalties proportionate to the risk.<\/p>\n\n\n\n<p>\u00abIn Northern Europe, tools such as UV lamps or ATP tests are in daily use. In Italy, they are not yet widespread. It is not a question of cost: a bioluminescence meter and a lamp cost no more than \u20ac5,000, compared to systems that cost hundreds of thousands of euros. The problem seems to us to be cultural: there is a lack of awareness that continuous monitoring is not a cost item, but a form of insurance\u00bb.<\/p>\n\n\n\n<p>Alitest\u2019s field experience is littered with concrete examples: alerts on products already distributed, market recalls, and contamination discovered too late, with production lines halted in the meantime. \u00abWhen a product is recalled from the market, the financial loss far exceeds the cost of any screening tool. Then there is the damage to reputation and, above all, the harm to the consumer, which has often already occurred before anyone realises it. That is why we insist: <strong>these tools are not for those who buy them simply to feel compliant. They are for those who have understood that quality is checked beforehand, not afterwards<\/strong>\u00bb.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Implementation: timelines and support<\/h2>\n\n\n\n<p>Operational adoption of the tools <strong>does not require specialised staff<\/strong>: the learning curve is the length of a single training session, and Alitest supports new clients during the initial plant mapping phase, identifying critical points to monitor, defining inspection frequencies, and setting up the sampling plan. \u00abWe have experience with dozens of different plants. We already know where to find the most common critical points: the aeration grids, the fittings, the stagnation points, the discharge zones. But every plant has its own specific characteristics. The final plan is drawn up by the company, together with its Quality Control manager. We suggest a method\u00bb.<\/p>\n\n\n\n<p>The reporting from the two proposed instruments allows a database to be built up over time on the plant\u2019s critical points, indicating the operator, the time and the result. This documentation proves useful during internal audits, certification and, in cases of private-label supply, as a guarantee to the client that production has commenced with a certified, clean
