{"id":239022,"date":"2026-07-15T10:32:13","date_gmt":"2026-07-15T08:32:13","guid":{"rendered":"https:\/\/www.alimentibevande.it\/?p=239022"},"modified":"2026-07-15T10:37:02","modified_gmt":"2026-07-15T08:37:02","slug":"wine-crisis-balsamic-vinegar-of-modena-supports-the-supply-chain","status":"publish","type":"post","link":"https:\/\/www.alimentibevande.it\/en\/imbottigliamento\/wine-crisis-balsamic-vinegar-of-modena-supports-the-supply-chain\/","title":{"rendered":"Wine crisis: Balsamic Vinegar of Modena supports the supply chain"},"content":{"rendered":"\n<p>While the wine sector is facing a complex phase, with slowing consumption and the search for new production outlets \u2013 as also demonstrated by the Piedmont Region&#8217;s initiative to encourage the transfer of surpluses to vinegar factories \u2013 the <a href=\"https:\/\/www.consorziobalsamico.it\/\">Consorzio Tutela Aceto Balsamico di Modena IGP<\/a> emphasises that Balsamic Vinegar of Modena PGI already represents one of the main industrial outlets for Italian wine and that greater protection for it can contribute to further increasing the demand for domestic grapes and wine. \u00a0<\/p>\n\n\n\n<p>The production of Aceto Balsamico di Modena PGI is based on must obtained from wine grapes, which, as it has to be concentrated or cooked, requires four to five times its weight in grapes. In addition, wine vinegar is used, which is obtained almost exclusively from domestic raw materials.<\/p>\n\n\n\n<p>It is precisely this production chain that generates a significant impact on the wine sector: <strong>the Consortium estimates that every year the production of Balsamic Vinegar of Modena PGI uses over 2.5 million quintals of wine grapes for the production of must and between 50 and 60 million litres of wine<\/strong>, representing an important and stable outlet for the Italian wine sector.<\/p>\n\n\n\n<p>&#8220;These are already very significant volumes, which could grow further at a time when the sector is looking for new market outlets,&#8221; says <strong>Cesare Mazzetti, President of the Consortium for the Protection of Balsamic Vinegar of Modena PGI<\/strong>. That is why we are working with wineries and institutions, starting with the Emilia-Romagna Region, to define supply chain agreements that encourage greater use of Italian wine and must, also in view of the next harvest, to be used for production and also for ageing, if the economic conditions are right.&#8221; &nbsp;<\/p>\n\n\n\n<p>However, there is an obstacle that currently limits the growth potential of the entire supply chain: <strong>the increasing spread, in Europe and the United States, of products marketed under the name &#8220;balsamic vinegar&#8221;, despite having no connection with Aceto Balsamico di Modena PGI<\/strong>. In fact, in several European countries \u2013 including Greece, Spain, Slovenia, Cyprus and Hungary \u2013 national regulations have been adopted that allow the term &#8220;balsamic vinegar&#8221; to be used even for products obtained with completely different ingredients and processes, in which must, raisins, fruit juices or even sugar are added to the vinegar. In the United States, moreover, the term &#8220;balsamic vinegar&#8221; continues to be used without any specific regulation.&nbsp;These are products that, from being a marginal phenomenon, have progressively gained market share, creating confusion among consumers and taking space away from the authentic product protected by the Protected Geographical Indication.<\/p>\n\n\n\n<p>To overcome the current regulatory fragmentation, the Consortium, together with Federvini and the European Vinegar Association (EVA), supports the<strong> amendment currently under consideration by the European Parliament that introduces common regulations on vinegars<\/strong>. The amendment stipulates that the term &#8220;vinegar&#8221; must always be accompanied by an indication of the raw material used or by any Geographical Indication, thereby overcoming the different regulations currently in force in the various Member States and protecting registered designations. A reform that would ensure uniform rules throughout the European Union, greater transparency for consumers and fair competition between producers. &nbsp;<\/p>\n\n\n\n<p>For the Consortium, the protection of the term &#8220;balsamic vinegar&#8221; is not only a battle for identity, but a concrete measure of industrial policy in favour of the Italian wine sector.<\/p>\n\n\n\n<p>&#8220;We need the full support of the Italian government so that this amendment is approved at European level and so that the regulations on vinegar-based condiments are also strengthened at national level,&#8221; concludes\u00a0Mazzetti. &#8220;It is not just a matter of protecting one of Italy&#8217;s main Geographical Indications: it means creating new opportunities for the entire wine sector. We estimate that, by eliminating imitation products from the market, the production of PGI Balsamic Vinegar of Modena could grow by at least 30%, with a consequent increase in demand for Italian must,
