pur\u00e9e, GC-IMS and chemometrics for characterising them"},"content":{"rendered":"\n<p><strong>Italy <\/strong>is one of the world\u2019s leading producers of <strong>tinned tomatoes<\/strong>, and the market for these products, which is of great economic importance, makes them vulnerable to potential <strong>fraudulent practices<\/strong>.<\/p>\n\n\n\n<p>The aim of a <strong>recent study<\/strong>, carried out by a group of Italian researchers (<strong>Barilaro et al., 2025<\/strong>), was to verify, through the application of <strong>chemometric techniques<\/strong>, the possibility of using <strong>GC-IMS<\/strong> (gas chromatography coupled with ion mobility spectrometry) <strong>analysis <\/strong>to characterise tomato pur\u00e9es.<\/p>\n\n\n\n<p>The data obtained from the chromatograms are subjected to chemometric classification analysis (PLSDA) to construct models capable of distinguishing samples based on the production plant, variety and region of origin of the tomato.<\/p>\n\n\n\n<p>The <strong>results <\/strong>highlight that the production site is the parameter that most influences the composition of the product\u2019s volatile
