{"id":234957,"date":"2026-03-13T11:16:35","date_gmt":"2026-03-13T10:16:35","guid":{"rendered":"https:\/\/www.alimentibevande.it\/uncategorized\/surgelati-la-surgelazione-iqf-a-supporto-della-qualita-organolettica\/"},"modified":"2026-03-13T11:30:22","modified_gmt":"2026-03-13T10:30:22","slug":"frozen-foods-iqf-freezing-supports-organoleptic-quality","status":"publish","type":"post","link":"https:\/\/www.alimentibevande.it\/en\/macchine-alimentari-en\/technology\/frozen-foods-iqf-freezing-supports-organoleptic-quality\/","title":{"rendered":"Frozen foods: IQF freezing supports organoleptic quality"},"content":{"rendered":"\n<p>On 11 March, the seminar <strong>&#8220;The Future of Cold \u2013 Trends and Technologies in Food Freezing<\/strong>&#8221; was held in Parma, promoted by the <strong><a href=\"https:\/\/www.ssica.it\/en\/\">Stazione Sperimentale per l\u2019Industria delle Conserve Alimentari (SSICA) \u2013 Fondazione di Ricerca<\/a><\/strong>, with technical collaboration from <strong><a href=\"https:\/\/www.linde.com\/\">Linde Gas Italia<\/a><\/strong>, a global player in the industrial gases sector.<\/p>\n\n\n\n<p>&#8220;The 2025 data for the retail channel \u2013 stated <strong>Giorgio Donegani, President of the <a href=\"https:\/\/www.istitutosurgelati.it\/\">Istituto Italiano Alimenti Surgelati<\/a><\/strong> (IIAS) \u2013 confirm stable, structural growth in the frozen food sector: over <strong>642,000 tonnes were consumed in Italian households<\/strong>, an increase of 1.1% compared to 2024.\u00a0\u200b\u200bAnd these are only partial figures, as the data on out-of-home consumption will be available in July.\u00a0\u200b\u200bHowever, the most significant aspect is not the figure itself, but what it reveals: more than one in two Italians regularly serve frozen products at mealtimes.\u00a0\u200b\u200bNot out of emergency convenience, but as a conscious choice.\u00a0\u200b\u200bIndeed, an <strong>AstraRicerche survey<\/strong> conducted for IIAS has shown that, in 4 out of<strong>5 cases, frozen food is more cost-effective<\/strong> than its fresh counterpart, without compromising on quality.\u00a0\u200b\u200bIn short, Italians have realised that frozen food is not an inferior alternative, but a smart response to the real needs of everyday life\u201d.<br><br>One of the best practices for ensuring the organoleptic quality of frozen foods is <strong>IQF<\/strong> (Individual Quick Freezing), which was demonstrated during the seminar at the SSICA Pilot Plant Laboratory using Linde Gas Italia\u2019s<strong>Cryoline<\/strong> <strong>CW<\/strong> system.<\/p>\n\n\n\n<p>&#8220;IQF freezing \u2013 explained <strong>Fabio Rolla,<\/strong> <strong>Cryogenic Freezing Expert at Linde Gas Italia<\/strong> \u2013 uses liquid nitrogen at \u2212196\u00b0C and represents a pivotal development in the food industry, as it enables individual pieces to be frozen separately, preventing the formation of single blocks.\u00a0\u200b\u200bThis technology provides an optimal response to the demand for products that are easy to portion and quick to defrost\u201d.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This was discussed on March 11 in Parma, during the seminar &#8220;The Future of Refrigeration &#8211; Trends and Technologies in Food Freezing&#8221;, promoted by the Stazione Sperimentale per l\u2019Industria delle Conserve Alimentari (SSICA) \u2013 Fondazione di Ricerca with the technical collaboration of Linde Gas Italia<\/p>\n","protected":false},"author":3836,"featured_media":234958,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"_acf_changed":false,"footnotes":""},"categories":[20657,20572],"tags":[21155,21156,21153,21154],"tipologia":[],"coauthors":[20589],"class_list":["post-234957","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-macchine-alimentari-en","category-technology","tag-frozen-foods","tag-iqf-freezing","tag-surgelati","tag-surgelazione-iqf"],"acf":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.6 -
