Traditional pasteurization, though simple and widespread, tends to compromise sensory quality and production flexibility; aseptic solutions, while ensuring high standards of safety and shelf life, are too expensive and oversized for the volumes of small and medium-sized production.<\/p>\n\n\n\n<p>This difficult balance led to the <strong>study by Gallego Ocampo and colleagues<\/strong>, which proposes a &#8220;third way&#8221;: a compact line capable of combining <strong>microbiological safety<\/strong>, <strong>sensory quality<\/strong>, and <strong>economic sustainability<\/strong>.<\/p>\n\n\n\n<p>The line integrates, in a single system, <strong>hygienic management<\/strong>, <strong>crossflow microfiltration<\/strong>, and <strong>selective pasteurization<\/strong> <strong>of the retentate only<\/strong>, which is then reintegrated into the permeate, with <strong>ultra-clean bag-in-box packaging<\/strong>. By heat-treating only this fraction and dosing it into the permeate, it is possible to modulate the product profile, from clear to pulpier.<\/p>\n\n\n\n<p>Tests show <strong>significant reductions in bacteria<\/strong>, <strong>yeasts<\/strong>, <strong>and molds<\/strong>, with no regrowth after packaging. The<strong> shelf life<\/strong> is up to 3 months for coconut water and 5 months for blackberry juice.
